A chouquette is a type of viennoiserie consisting of a small portion of choux pastry sprinkled with pearl sugar, and sometimes filled with custard or mousse. A chouquette can also be dipped in chocolate, or sprinkled with chocolate chips.
Ingredients
– 25cl water
– 100g butter
– 1 tablespoon sugar
– 160g all-purpose flour
– a pinch of salt
– 1/2 teaspoon baking powder
– 3 eggs
For the egg glaze : 1 egg yolk lightly beaten with 1 teaspoon milk
Method
Preheat your oven to 190° for 30 mns
In a large saucepan bring the water, sugar and butter to the boil.
Remove from the heat as soon the mixture starts boiling and dump in the flour, salt and baking powder (all at once)
Stir rapidly until the mixture is smooth and pulls away from the sides of the pan.
Add the first egg. Stir well. The success of the recipe depends on the proper integration of this first egg.
Add in the other eggs, one at a time.
Grease a baking tray with butter.
Use two spoons to shape little mounds of dough the size of a walnut and scrape them off onto the buttered tray.
Brush the top of the mounds with the egg glaze
Sprinkle sugar crystals over the tops and sides of the mounds.
Bake the chouquettes for 30 minutes or until they are puffed with a nice light-brown colour.
